This high-protein, gluten-free self-saucing chocolate pudding is a perfect dessert that feels so indulgent whilst supports your goals!
Ingredients
1/2 cup butter
1/2 cup coconut milk
1 egg
1 tsp vanilla
1 tsp baking powder
2 tbsp coconut sugar
2 tbsp cacao
1/2 cup almond meal
1/2 cup protein powder
Utensils
Method
Preheat oven to 180'c. Grease ramekins. Whisk together butter, milk, egg, vanilla. Add in baking powder, coconut sugar and cacao powder.
Gently fold through protein powder and almond meal. Pour evenly into rams.
In a small bowl, combine coconut sugar, cacao powder. Sprinkle over the top of puddings. Gently pour boiling water evenly over all 4 (1/4 cup each).
Bake in oven for 15-20 minutes. Serve immediately.
