1 taco seasoning sachet (we like the Mingle brand)
400 g tin of crushed tomatoes
1 cup of salt reduced chicken or beef stock
400 g tin of black beans or pinto beans
Generous handful or baby spinach
125g microwave rice (or 1 cup cooked rice)
To serve
Lime juice
Jalapenos (optional)
Sprinkle of cheese
If you would prefer to use your own spices over a taco/Mexican sachet add 2 teaspoons cumin, 2 teaspoons smoked paprika and 1 teaspoon of dried oregano.

Method
Finely dice 1 onion and capsicum
Heat a large frypan on high heat. Add 1 tablespoon of extra virgin olive oil and onion and capsicum. Cook stirring until starting to soften - about 3 minutes
Add 2 teaspoons minced garlic and 500g extra lean beef mince. Cook breaking the mince up with a spoon to prevent lump until its browned - approx 5 minutes
Add sachet of Taco seasoning or your own spices. Stir and cook for 1 minute
Add 400g tinned tomatoes, 400g tin of beans that have been drained and rinsed and 1 cup of chicken or beef stock. Allow to simmer for approx 3 minutes. heat your rice up in the microwave now
Add cooked rice and big handful of baby spinach. Stir through and cook for a further 2 - 3 minutes
Serve with lime juice, a sprinkle of grated cheese and jalapeños.
