Mango and Cream Ice Cream

These mango and cream ice creams are the perfect summer dessert and so simple to make!

Ingredients

2 mangoes, large

150ml light coconut cream

2 tbsp maple syrup

Utensils

Blender

Ice cream molds

Method

  1. Peel and dice the mangoes, then place into a blender. Add coconut cream and maple syrup.

  2. Blend until smooth and creamy. Taste and adjust sweetness if needed.

  3. Pour mixture evenly into popsicle molds, leaving a little space at the top for expansion.

  4. Insert sticks and freeze for at least 6 hours or until fully set.
