Slow-cooked Beef Massaman Curry

This slow-cooked beef massaman curry is such a tasty and warming recipe that is so easy to make. Once you’ve added all ingredients, you can forget about it until dinner time!

Ingredients

  • 1kg beef, diced
  • 195g Ayam Thai Massaman paste
  • 1 brown onion, thick cut
  • 2 medium carrots, peeled and thick cut
  • 5 potatoes, peeled and quartered
  • 400ml coconut milk
  • 1 cup chicken stock
  • 1 lime, juice
  • 1 tbsp brown sugar
  • 1 tbsp fish sauce
  • 2 cinnamon sticks

    5 cardamon pods

    Optional: Greek yoghurt, coriander, basmati rice

Utensils

  • Slow cooker
  • Wooden spoon
  • Measuring spoons

Method

  1. Peel and cut up carrots and potatoes.
  2. In the pot of your slow cooker, add all ingredients. Combine well and place the lid on. Cook for 8 hours on high (you may like to reduce to low after 6 hours).
  3. Serve curry hot with Greek yoghurt, coriander and rice.
