Baked Thai Red Curry Dumplings

A flavour-packed, versatile and warming meal!

Meal: Lunch or dinner
Dietary: Dairy free, option for veg/vegan (dumplings)


A different take on dumplings- these are packed with flavour, quick and like a hug in a bowl!


Ingredients

  • 300g frozen dumplings, of choice
  • 400ml coconut milk
  • 1 tsp sesame oil
  • 1 tsp garlic, minced
  • 1 tsp ginger
  • 2 tbsp red curry paste, heaped
  • 3 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 2 bunches bok choy, washed and thickly sliced

Optional (to top):

  • Sesame seedsChilli oil
  • Spring onions
  • Coriander

Utensils

  • Baking dish
  • Whisk

Method

  1. Preheat oven to 200’C. Place coconut milk, sesame oil, garlic, ginger, red curry paste, soy sauce and vinegar in a baking dish and whisk to combine.
  2. Place bok choy and dumplings in sauce and bake for 15-20 minutes or until cooked through.
  3. Once baked, top with optional sesame seeds, coriander, spring onions and chilli oil and serve immediately.
