Just one bowl, no blender, no fuss. They’re fridge-stable, freezer-friendly, and perfect for school pick-ups, desk drawers or that 3pm energy dip.
1 cup almond flour or almond meal
½ cup vanilla protein powder (whey works best)
⅓ cup coconut flour or oat flour (DIY by blending oats)
⅓ cup cashew butter (softened if needed)
2 tsp vanilla extract
2 tbsp maple syrup
3 tbsp almond milk
¼ cup dark choc chips

1. Mix the dry ingredients
In a large bowl, stir together the almond flour, protein powder, and coconut (or oat) flour.
2. Add the wet ingredients
Add cashew butter, vanilla extract, and maple syrup. Mix well until the texture resembles crumbly sand. Use your hands if needed.
3. Adjust and fold
Add almond milk and choc chips. Use hands to bring the dough together. If the mix is too dry, add more almond milk one teaspoon at a time. Too sticky? Add extra coconut flour.
4. Roll into balls
Portion into 12 even balls (about 30g each). Store in the fridge for up to 7 days, or freeze for up to 4 weeks.
