Healthy Breakfast Cookies

Not all cookies are created equal—and these ones prove it!
Perfect for breakfast on-the-go or a sweet, satisfying snack, these Healthy Breakfast Cookies are packed with nutrient-dense goodness and just the right amount of indulgence. The mix of oats, seeds, banana, and a few dark choc chips means you're getting fibre, healthy fats, and natural sweetness all in one.

 

Ingredients

• ¾ cup rolled oats
• ½ cup almond flour
• ¼ cup pumpkin seeds
• ¼ cup dried cranberries
• 1 large ripe banana
• ¼ cup peanut butter
• ¼ cup chocolate chips (optional)

 

Method

In a mixing bowl, combine rolled oats, almond flour, pumpkin seeds, and dried cranberries.

Mash the banana using a fork, mash your banana until smooth. 

Stir in the mashed banana and peanut butter into the oat mixture until a sticky dough forms.

Add choc chips If you’re feeling a little indulgent, fold in the chocolate chips.

Slightly wet your hands to prevent sticking, then form 8 cookies and place them on a lined baking tray.

Bake at 180°C (356°F) for 18–20 minutes until golden. Let cool on a wire rack.
