This Sheet Pan Chicken Pita with Herby Ranch is a fuss-free lunch made for busy days. Tender, spiced chicken is roasted on one tray, then layered into warm pitas with crunchy slaw, fresh cucumber and a creamy herby yoghurt dressing.

Ingredients

400g chicken, thinly sliced
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika

1 tsp dried parsley

4 pita bread, warmed

½ cup Greek yoghurt

10g chives, finely sliced

2 tbsp dill, finely sliced 

2 tbsp parsley 
1 cucumber, sliced

1/4 head white cabbage, finely shredded

1 tsp vinegar

Salt, to taste

Method

  1. Preheat the oven to 200’c. Line a baking tray with paper and lemon.

  2. Slice chicken into strips and add to a large bowl. Season generously and toss to coat. Place on a baking tray and cook for 20 minutes, rotating half way through. Place pitas in the oven 5 minutes before the chicken is finished to warm.

  3. Meanwhile, in a small bowl add yoghurt and herbs and combine. Add shredded cabbage and coat well.

  4. Add slaw, cucumber and chicken to warmed pitas and serve immediately.
