Ingredients
- 250g chicken breast or tenderloins, diced
- 2 cups roasted pumpkin
- 1 cup cooked brown rice
- 1 large handful baby spinach, finely chopped
- 1 large handful rocket, finely chopped
- ½ red onion, finely sliced
- 4 tbsp basil pesto
- Juice of ½ lemon
- 2 tbsp pumpkin seeds
- 40g reduced-fat feta, crumbled
- Fresh basil leaves, to serve
- Freshly cracked black pepper
Method
- Season the chicken with freshly cracked black pepper and cook in a lightly greased frying pan over medium heat for 5–6 minutes on each side, or until cooked through. Alternatively, cook the chicken in the air fryer. Transfer to a plate and allow it to rest for five minutes before slicing.
- Add the brown rice, roasted pumpkin, spinach, rocket, red onion and chicken to a bowl.
- Dollop the basil pesto over the top and finish with a squeeze of fresh lemon juice.
- Sprinkle over the pumpkin seeds and crumbled feta, add another crack of black pepper and serve immediately.
