Nacho Baked Rice Recipe

A warm, cheesy dinner recipe that’s perfect for busy weeknights! This nacho baked rice is a family-friendly, one-dish meal that’s easy to prepare and full of flavour.

This nacho baked rice brings all the comfort of cheesy, oven-baked goodness to your table. Gluten-free and versatile, combining beef mince, rice, salsa, and spices in one dish, it’s simple to prepare and ideal for feeding a hungry family.


Bake it until golden and bubbling, then top with cheese, corn chips, and fresh additions for a dinner that’s both fun and satisfying. Perfect for sharing, this recipe also makes for great leftovers.

Ingredients

500g beef mince

1 brown onion, diced

1 red capsicum, diced

2 packets mingle seasoning

1 cup jasmine rice

600g salsa

500ml beef stock

½ cup cheese, shredded


Serve with:

  • Avocado
  • Greek yoghurt

Method

  1. Preheat the oven to 200'C.
  2. In a large baking dish, combine all ingredients. Ensure the rice is fully submerged in the liquid.
  3. Cover tightly with foil and bake for 45 minutes. Stir and taste for seasonings. Add a little bit of extra stock here if needed, cover and cook for another 15 minutes.
  4. Top with cheese and corn chips and bake uncovered for 15 minutes until golden brown. Portion out into bowls or serve it family style and with greek yoghurt and avocado.
