6 eggs

1 cup flour

2 tsp baking powder

1/2 cup artichokes, chopped

1/2 cup semi dried tomatoes chopped

150g feta

1/4 cup cheese 

60g spinach

Method

  1. Preheat oven to 180'C. Line muffin tray with muffin cases.
  2. In a large bowl, whisk together eggs. Add flour and baking powder and whisk again. Add all fillings to the mixture with a generous pinch of salt and pepper and stir to combine.
  3. Pour mixture evenly into muffin tray. Bake for 30 minutes or until golden.
