
High-Protein Cottage Cheese Tacos
Looking for a quick, healthy and high-protein meal that still feels like comfort food? These Cottage Cheese Tacos are a game-changer. Packed with protein and flavour, they’re perfect for breakfast, lunch or even a light dinner. The best part? The taco shells are made from cottage cheese and egg whites — no flour, no fuss, just real, wholesome ingredients.
Ingredients
For the taco shells:
• 3–4 tbsp cottage cheese (low-fat works great)
• 1 egg white
• Pepper, oregano & chilli flakes (to taste)
For the topping:
• 2 eggs
• 2 tbsp pesto
• A handful of rocket
• Chopped chives
• Sriracha (optional, for a spicy kick)
Method
Preheat your oven to 180°C (350°F) and line a baking tray with baking paper.
Whisk together the cottage cheese, egg white and your seasonings (pepper, oregano and chilli flakes).
Spoon the mixture onto the tray into two round, flat taco shapes. Keep them even and smooth.
Bake for 25 minutes, or until firm and golden.
Prepare your toppings — fry your eggs and get your pesto, rocket, chives and sriracha ready.
Assemble your tacos with all the toppings.
Enjoy warm and fresh out of the oven!
