
Healthy Nachos: A Guilt-Free Take on a Classic Favourite
Who doesn’t love a big plate of nachos? Crunchy, cheesy, and packed with flavour, they’re a go-to comfort food. But traditional nachos can be heavy on unhealthy fats and empty calories. That’s why we’re bringing you a better-for-you version that keeps all the deliciousness while making smart swaps for a healthier meal!
This recipe uses crispy baked Mountain Bread chips instead of deep-fried tortilla chips, lean beef mince for added protein and Greek yoghurt as a light and tangy alternative to sour cream. The result? A nutritious, satisfying plate of nachos you can enjoy guilt-free!
Ingredients:
• 3 Mountain Bread wraps (any kind)
• Spray olive oil
• 1/2 teaspoon garlic powder
• 1/2 teaspoon smoked paprika
• 200g extra lean beef mince
• 1/2 cup rinsed and drained tinned black beans
• 1 tablespoon Mexican seasoning or taco spice
• 1/3 cup Mexican tomato salsa
• 50g grated cheese (Mexican blend recommended)
• 1 small tomato, chopped
• 1/2 avocado, mashed
• 1/2 cup plain Greek yoghurt
Make the Chips
• Preheat your oven to 180°C.
•Cut the Mountain Bread wraps into small triangle shapes to resemble tortilla chips.
•Line a baking tray and spread the chips in a single layer. You may need two trays.
•Lightly spray with olive oil and sprinkle with garlic powder, smoked paprika, and a pinch of salt.
•Bake for about 5 minutes or until crispy. Remove from the oven and transfer to a baking dish.
Cook the Mince
• Heat a frypan over high heat and lightly spray with olive oil.
• Add the beef mince and cook until browned.
• Stir in the Mexican seasoning and cook for another minute.
• Add the Mexican salsa and drained black beans. Simmer for 2 minutes.
Assemble & Bake
• Spread the cooked mince mixture evenly over the crispy nacho chips.
• Sprinkle the grated cheese on top.
• Bake for 10 minutes or until the cheese melts.
Serve & Enjoy!
• Top with chopped tomatoes, extra salsa, a dollop of Greek yoghurt, and mashed avocado.
• Serve immediately and enjoy your delicious, healthy nachos!
Meal Prep Tip!
You can make the Mountain Bread chips in advance and store them in an airtight container for up to two weeks. This makes it even easier to whip up a quick and nutritious meal whenever you’re craving nachos!
