240g pad thai paste
1 tsp fish sauce
1 tsp sugar
200g pad thai rice noodles, soaked
500g chicken breast, raw
100g tofu, cubed
2 eggs
2–3 spring onions, sliced
2 tsp sesame oil
1 cup bean sprouts
1 lime
Chilli flakes (optional)
Large frying pan
Tongs
Heat the sesame oil in a large frying pan over medium heat. Add the chicken and cook until golden and cooked through. Remove from the pan and set aside.
In the same pan, add the tofu and cook until browned on all sides.
Add the soaked rice noodles and ½ cup water. Toss well using tongs to soften the noodles.
Pour in the pad thai paste, fish sauce and sugar. Stir until everything is evenly coated.
Push the noodles to one side of the pan. Crack in the eggs and scramble until cooked, then mix through the noodles.
Add the spring onions, bean sprouts and cooked chicken. Toss to combine.
Serve immediately with fresh lime and chilli flakes if desired.
Extra veg: Add capsicum, zucchini or carrots for more colour and crunch.
Heat level: Adjust chilli flakes to suit your taste (or skip for kids).
