Creamy Tomato and Burrata Gnocchi Dinner Recipe

This recipe is a creamy, comforting gnocchi dish, perfect for an easy weeknight dinner.

Creamy Tomato and Burrata Gnocchi is a simple yet indulgent dinner that comes together in just 20 minutes. A rich tomato and cream sauce coats pillowy gnocchi, finished with fresh basil, chilli flakes and torn burrata for an extra layer of creaminess. 


It’s an easy, crowd-pleasing meal that feels a little bit special without the effort.

Ingredients

1 tbsp extra virgin olive oil

1 tsp garlic, crushed

1 brown onion, finely diced

400g cherry tomatoes

150ml light cream

500g gnocchi

1 burrata 

Basil, handful

Salt and pepper, to taste

Chilli flakes, optional

Utensils

Frying pan

Medium pot

Wooden spoon

Method

  1. Heat olive oil in a large frying pan. Add diced onion and garlic and cook until transparent. Add in cherry tomatoes, salt and pepper and cook down until soft. 

  2. Add cream to tomatoes and combine well. Allow to lightly thicken. 

  3. Meanwhile, in a large pot, bring water to the boil and cook gnocchi as per instructions on the packet. Reserve a ½ cup of pasta water. Drain and add to tomato sauce. Add in pasta water slowly until glossy and saucy.

  4. Remove from heat and break burrata over the top. Add basil and chilli flakes.
