
Chocolate Crispy Slice
Looking for a quick, easy, and delicious treat that feels a little indulgent but is still made with wholesome ingredients? This Chocolate Crispy Slice ticks all the boxes! It's gluten-free, packed with a little extra protein, and perfect for lunchboxes, afternoon snacks, or when you just need a little something sweet.
Even better? It only takes 10 minutes to put together (plus setting time) and makes 24 pieces — perfect for sharing… or stashing away for yourself!
Ingredients:
• 2.5 cups puffed rice cereal (rice bubbles)
• 1/3 cup chocolate or vanilla protein powder
• 1/2 cup honey
• 1/2 cup 100% peanut butter (or almond butter)
• 200g milk or dark chocolate
• 1 tablespoon coconut oil
• 1 tablespoon chopped nuts (for topping)
Method:
In a large mixing bowl combine the puffed rice cereal and protein powder. Give it a good stir.
Add in the honey and peanut (or almond) butter. Stir thoroughly until everything is evenly combined.
*Tip: If the mixture seems too dry or isn't coming together easily (this can happen depending on your nut butter), simply add a spoonful of coconut oil to help bind it.
Line your baking tin with baking paper.
Press the rice bubble mixture firmly into the tin, creating an even, compact layer.
In a microwave-safe bowl or jug, add the chocolate and coconut oil. Microwave on medium-low in 30-second intervals, stirring in between, until fully melted and smooth.
Pour the melted chocolate over the slice, spreading it out evenly.
Sprinkle with chopped nuts for a little extra crunch and flavour.
Refrigerate for at least 1 hour or until the slice is set.
Once set, cut into 24 pieces. One slice equals one serve!
