Scrambled Egg Breakfast Plate
One pan and 15 minutes is all you need to create this healthy, balanced and satisfying breakfast plate. The best option on those busy mornings!
This one is perfect for phase 1 of our 8 week challenge aswell!
- 1 tsp olive oil
- 1,5 cup of spinach
- 1/4 tsp of garlic powder
- Himalayan salt to taste
- 2 eggs
- 1 tomato, sliced
- 3 strawberries, halved
- 30g goat cheese
- 1 tsp hemp seeds
1. Heat the pan over medium-high heat. Add half of the oilve oil (1/2 tsp), spinach, garlic powder and a small pinch of salt. Sautee for 2-3 minutes.
2. Remove spinach from the pan and add the remaining olive oil (1/2 tsp). Add eggs and a small pinch of salt and cook for 2-3 minutes over low-medium heat, mixing all the time.
3. Assemble: serve scrambled eggs and spinach with a side of sliced tomato, halved strawberries, crumbled goat cheese and hemp seeds.
