Plant-Based Breakfast Tacos: A Delicious Start to Your Day!

With crispy roasted potatoes, savory tofu chorizo, and a fresh salsa topping, these tacos are a vibrant and satisfying meal for any time of the day. These breakfast tacos are not only nutritious but are also super versatile.

45g yellow potatoes

1 corn tortilla
For the Tofu Chorizo:

99g firm tofu (crumbled)

1 tsp chili powder

0.75 tsp smoked paprika

0.03 tsp cayenne pepper

0.03 tsp ground cumin

7.5 ml tamari (soy sauce)

1 tsp apple cider vinegar

0.5 tsp maple syrup

3.75g tomato sauce
For the Salsa:
-
10g red onion (diced)
-
15g avocado (cubed)
-
10g red capsicum (diced)
-
5 ml lime juice
-
5g coriander (flat-leaf, chopped)
Method
Step 1: Preheat your oven to 200°C (400°F) and line a large baking sheet with parchment paper. Chop the yellow potatoes and place them on the baking sheet. Spray lightly with olive oil and roast for about 20-25 minutes, or until golden brown and crispy.
Step 2: While the potatoes are roasting, drain the tofu and crumble it into a mixing bowl. Add the chili powder, smoked paprika, cayenne, and cumin, tossing everything together. Next, add the tamari, apple cider vinegar, maple syrup, and tomato sauce. Mix well to coat the tofu in this flavorful blend.
Step 3: Heat a medium pan over medium heat and lightly spray with olive oil. Add half of the tofu mixture to the pan and cook for 3-4 minutes, undisturbed, letting it sizzle. Once it begins to brown, flip the tofu and cook the other side for an additional 3-4 minutes until crispy.
Step 4: While the tofu is cooking, dice the red onion, avocado, and red capsicum. Add these to a small bowl along with the chopped coriander. Squeeze the lime juice over the top and mix to combine. Set the salsa aside.
Step 5: In a clean pan, warm your corn tortilla over medium heat, flipping it occasionally until it’s slightly browned and warm on both sides.
Step 6: Now comes the fun part! To assemble your taco, layer in some tofu chorizo, the crispy roasted potatoes, and a generous scoop of fresh salsa. Fold the tortilla and enjoy!
