
Fish Kebab Tacos

Ingredients
• 150g white fish
• 35g butter chicken sauce
• 50g plain Greek yogurt (Chobani)
• 25g shredded lettuce
• 5g mint leaves
• 35g cherry tomatoes, chopped
• 30g cucumber, diced
• 3g lemon zest
• 3 white corn tortillas (Mission)
• Salt to taste
Method
In a small bowl mix the lemon zest, butter chicken sauce, and a pinch of salt.
Dice the fish into small cubes thread them onto skewers, and brush the sauce mixture over them, ensuring even coating.
Preheat your grill or grill pan to medium-high heat. Grill the fish skewers for 2-3 minutes per side, until fully cooked.
Prepare the yogurt sauce by combining Greek yogurt, cherry tomatoes, cucumber, and mint leaves in a bowl.
Once the fish is cooked, remove it from the skewers and place it in a bowl.
Assemble the tacos by layering shredded lettuce, grilled fish, and topping it with the yogurt sauce.
Repeat the process for the remaining tortillas and enjoy!
