• 300g raw shelled prawns
• 70g dry rice noodles (pad thai style)

Note: You can replace the prawns with precooked shredded chicken. If using frozen raw prawns, defrost them before cooking.
Instructions:
Begin by preparing the vegetables cut the broccoli into small florets, thinly slice the carrot, and chop half of a red capsicum. Having everything prepped beforehand will make the cooking process much smoother.
In a medium saucepan add the Thai red curry paste, peanut butter, and coconut milk. Whisk everything together over medium heat until well combined and fragrant. This creates a rich and flavourful base for the soup.
