Perfect post-workout or as a midday pick-me-up, they’re made with simple, nourishing ingredients like almond butter, coconut oil, raw cocoa, and protein powder. Plus, they’re gluten-free, refined sugar–free, and freezer-friendly.
2 tbsp (30g) coconut oil
2 heaped tbsp (50g) almond butter
¼ cup (80g) maple syrup
2 tbsp (15g) raw cocoa powder
30g unsweetened protein powder
20g almond flour
Pinch of salt
1 tsp vanilla extract
Crushed almonds to top (optional)
2 mixing bowls
Whisk
Small square or rectangular mold
Parchment paper
1. Melt the base
In a small bowl, melt the coconut oil, almond butter and maple syrup. You can do this in the microwave or over a pan of simmering water. Whisk until completely smooth and combined.
2. Mix the dry ingredients
In a larger bowl, combine the cocoa powder, protein powder, almond flour and salt.
3. Combine and form the dough
Pour the warm almond butter mixture into the dry ingredients. Add the vanilla extract and mix until a soft dough forms.
4. Press and freeze
Line a small mold or tray with parchment paper. Press the dough into the mold evenly and firmly. Freeze for at least 4 hours or overnight.
5. Slice and top
Remove from the freezer and cut into bite-size pieces. Top with crushed almonds for extra crunch, if desired.
6. Store or serve
Enjoy straight from the fridge or freeze for longer-term snacking. Will keep for up to 3 days in the fridge or 2 weeks in the freezer.
