Ingredients
1 whole egg
100g egg whites (for extra protein with fewer calories)
2g fresh chives, finely chopped
40ml skim milk
30g spinach, chopped
20g light mozzarella, shredded
Instructions
Preheat the Oven: Set your oven to 175°C (350°F). Grease a muffin tin well to avoid sticking.
Whisk the Eggs: In a large bowl, whisk together the whole egg and egg whites until they’re blended and slightly frothy.
Add the Good Stuff: Mix in the chives, milk, spinach, and mozzarella. Stir until everything is evenly combined.
Fill the Muffin Cups: Pour the egg mixture into the muffin tin, filling each cup about 2/3 full to allow room for them to rise.
Bake: Place the tin in the oven and bake for 20-25 minutes, or until the tops are golden and the eggs are set.
Cool & Enjoy: Let the muffins cool in the tin for a few minutes, then carefully pop them out. Serve warm or let them cool completely to store for later!
