Ingredients

6 eggs

1 cup flour

2 tsp baking powder

1/2 cup artichokes, chopped

1/2 cup semi dried tomatoes chopped

1/4 cup olives pitted and chopped

2 spring onion, chopped

150g feta

1/4 cup cheese 

60g spinach

1 large bowl

1 medium bowl

1 small bowl

Method

  1. In a medium bowl, prepare pickled carrots by adding carrots, vinegar, sugar and salt. Combine well and set aside.
  2. In a small bowl, combine mayo and sriracha. Set aside.
  3. In a large bowl, combine patty ingredients and combine well (this is easiest with clean hands). Fry over a medium heat and set aside. 
  4. Assemble burgers by adding mayo to the base, then your patty, pickled carrot, cucumber, jalapeño, and coriander. Enjoy fresh!
