Quick Protein Pancakes

¾ cup all purpose or fine spelt flour

¼ cup vanilla protein powder

1 tsp baking powder

½ tsp baking soda (bicarbonate)

pinch of sea salt

¾ cup unsweetened plant milk (soy or almond works well)

1 tsp apple cider vinegar
-
handful dark chocolate chips, banana slices and maple syrup for serving

In a mixing bowl, combine flour, protein powder, baking powder, baking soda and salt.

Add milk and a teaspoon of apple cider vinegar and quickly mix until combined (don’t overmix).

Bake pancakes on a hot skillet greased with some coconut oil, about 2 tablespoons of batter per pancake, until golden brown on both sides.
