Quick Protein Pancakes

Pancakes for breakfast, I mean who doesn’t love them?
But we are used to think about pancakes as a treat meal, something we can have only once in awhile and we cannot count them into our healthy diet plan. But what if it’s all not true?
This recipe is not only quick and easy, but it’s also a perfect combination of carbs and protein, that will fuel your body if eaten an hour or two before workout or a short while after finishing it.
You are only a bunch of ingredients and 20 minutes away from this tasty and nutritious breakfast. And these are pancakes, remember, it’s the best breakfast food on the planet, right? So forget about all the macros and simply enjoy!
Recipe (makes 6 pancakes)
Ingredients:
  • ¾ cup all purpose or fine spelt flour

  • ¼ cup vanilla protein powder

  • 1 tsp baking powder

  • ½ tsp baking soda (bicarbonate)

  • pinch of sea salt

  • ¾ cup unsweetened plant milk (soy or almond works well)

  • 1 tsp apple cider vinegar

    • handful dark chocolate chips, banana slices and maple syrup for serving

Method:
  1. In a mixing bowl, combine flour, protein powder, baking powder, baking soda and salt.

  2. Add milk and a teaspoon of apple cider vinegar and quickly mix until combined (don’t overmix).

  3. Bake pancakes on a hot skillet greased with some coconut oil, about 2 tablespoons of batter per pancake, until golden brown on both sides.
