Grilled Pineapple Tofu Skewers

Is it summer barbeque weather yet? Either way, these Pineapple Tofu Skewers can be made on a grill or in a pan! They’re not only a perfect combination of sweet and salty, but they’re completely guilt free. A dish like this would normally be filled with artificially sweet sauces, but today we’re replacing those not-so good-for-you sauces with a healthy (and delicious) marinade!

 

Cook Time: 1 hour

Dietary Requirements: Vegan, Vegetarian & Gluten Free 

 

WHAT YOU NEED 

For Rice:

- 1 cup rice (Jasmine or Basmati)

- 2 cups water

- 1 tbsp coconut oil

- 1 stick lemongrass

- Pinch of salt 

- Sliced green onion

- Chopped cilantro

- A few slices of ginger 

 

Marinade:

- 2 cloves minced garlic

- 2 tbsp finely diced ginger 

- 2 tbsp finely diced pineapple (or pineapple juice)

- 2 tbsp liquid aminos (a soy sauce alternative)

- 1 tsp apple cider vinegar 

- 1/2 tsp tumeric

- Drizzle of honey (or maple syrup)

- Pinch of salt 

 

For Tofu: 

- 1 block extra firm tofu

- 2 tbsp coconut oil

- Cubed pineapple 

- Sliced green onion

- Chopped cilantro

- Freshly grated ginger 

- Lime juice 

 

Utensils:

- Frying pan 

- Spoon 

- Mixing bowl 

 

 

HOW TO MAKE 

  1. Remove tofu from package, cut in half lengthwise & place it on a dry towel to remove the moisture. Fold the towel over on both sides to remove as much moisture as possible. Set aside while comparing other components.
  2. To a rice cooker add 2 cups of rice, 3 cups of water, 2 tbsp of coconut oil, a few slices of ginger & lemongrass, & a pinch of salt. Switch to "cook". 
  3. In a bowl add 2 cloves of minced garlic, 2 tbsp of finely diced ginger, 2 tbsp of finely diced pineapple, 2 tbsp of liquid aminos, 1 tsp of apple cider vinegar, 1/2 tsp of turmeric, a drizzle of honey & a pinch of salt. 
  4. Cut the tofu into cubes & add it to the marinade. Gently stir tofu into the mixture. Cover with clear wrap & allow to sit in the marinade for at least 30 minutes. 
  5. When ready to cook add 2 tbsp of coconut oil to the pan & sear the tofu & pineapple on medium-high heat until crisp. If you own a grill, add the tofu & pineapple to skewers & grill until crisp. 
  6. When the tofu is about to be finished, remove rice from heat & add sliced green onion, chopped cilantro, & freshly grated ginger. Add salt if needed. 
  7. When ready to serve, thread the tofu & pineapple onto skewers. This yields about 4. Garnish with some more green onion, cilantro, freshly grated ginger, & lime juice!
