Sweet Treat: Choc Almond Fudgey Bites

HERE’S WHAT YOU NEED:
2 tbsp (30g) coconut oil
2 heaped tbsp (50g) almond butter
¼ cup (80g) maple syrup
2 tbsp (15g) raw cocoa powder
30g unsweetened protein powder
20g almond flour
pinch of salt
1 tsp vanilla extract
crushed almonds to top (optionally)
HOW TO MAKE IT:
In a smaller bowl melt coconut oil, almond butter and maple syrup. You can do it in a microwave or over a pan with simmering water, whisking until completely melted.
In a bigger mixing bowl combine raw cocoa powder, protein powder, almond flour and salt.
Pour melted almond butter mixture to the bowl with dry ingredients. Add vanilla extract and combine until dough is formed.
Press the dough into a mold lined with parchment paper. Place in the freezer for at least 4 hours or overnight.
Take out of the freezer and cut into bite size shapes.
Optionally top with crushed almonds.
Eat immediately or store in the fridge for up to 3 days. You can also store cut bites in the freezer for a couple of weeks.
