Ingredients
- 500g beef mince
- 1 brown onion, diced
- 2 tsp garlic
- ½ cup carrot, grated
- ½ cup zucchini, grated
- ½ cup breadcrumbs
- ¼ cup parmesan
- 1 egg
- Italian herbs
- Salt and pepper
- Olive oil, for cooking
Method
- Place the beef mince in a large bowl. Add the onion, garlic, carrot, zucchini, breadcrumbs, parmesan, egg, Italian herbs, salt and pepper.
- Mix until well combined.
- Roll the mixture into small balls, using around 1½ tablespoons of mixture for each, and place on a tray or plate.
- Heat a large non-stick frying pan over medium heat and add a light spray or drizzle of olive oil. Cook the meatballs in batches, turning occasionally, for 8–10 minutes or until golden brown and cooked through. Alternatively, brown them in the frying pan before transferring them to the oven to finish cooking.
- Serve with pasta, rice or salad, or enjoy 2–3 as a snack.

Will the kids notice the vegetables?
The carrot and zucchini are already grated and mixed through the meatballs, but if you have particularly veggie-savvy little ones, you can blend the vegetables even finer before adding them to the mixture.
