Delish Carrot & Orange Cake Truffles

The countdown to the Easter bunny making his deliveries is fast approaching! Cue the naughty Easter treats. We know how hard it may be to resist temptation, but we've got some egg-cellent treats that will get you through the holiday season!
These little no-bake truffle bites are healthy, nutritious, naturally sweetened and super quick to prepare - PLUS they taste fking delicious! Oh and the best part? They'll last you all week long so you can enjoy them as a healthy snack...
WHAT YOU NEED:
- 1 cup rolled oats
- 3⁄4 cup walnuts
- 1⁄4 cup dessicated coconut
- 5 big medjool dates (or 8 smaller dates)
- 1 medium carrot, grated (approximately 3⁄4 cup grated carrot) zest of one medium orange
- 3 tbsp orange juice
- 1 tsp cinnamon
- 1⁄2 tsp powdered ginger
- pinch or himalayan salt
- 1 tbsp honey
HERE'S HOW TO MAKE IT

Place all the ingredients in a food processor and blend until sticky dough is formed. Scrape down the sides few times to help the ingredients incorporate into the dough.

With your hands roll the dough into about 15 even balls. (It helps if you slightly wet your hands so the mixture doesn’t stick to them)

Coat each ball with dessicated coconut.

It’s best to let the truffles sit in the fridge 30 minutes to 1 hour before serving.

Store in an airtight container placed in the fridge for up to 5 days.
