A soft, lightly spiced loaf that makes snacking easy all week

What makes a good high-protein snack loaf?

The best protein loaf is one you'll actually keep making. This one uses tender stewed apple for natural sweetness and moisture, wholemeal self-raising flour for fibre, and Greek yoghurt and protein powder to keep every slice satisfying. It takes about 20 minutes of hands-on time and gives you ten slices to work through during the week. Here's exactly how to make it.

Why this loaf works as a snack

Most sweet loaves rely on a lot of sugar and butter to stay moist, which means they taste lovely but leave you hungry again an hour later.

This version does it differently. The stewed apple does most of the sweetening work, so there's only two tablespoons of maple syrup in the whole loaf. Greek yoghurt and olive oil keep it soft without heaviness, and the protein powder and wholemeal flour together mean each slice actually holds you until your next meal.

The cinnamon and nutmeg do the rest. Warm, familiar, and the reason your whole kitchen will smell like it's worth waiting for.

Ingredients (serves 10)

Stewed apple

  • 3 medium Granny Smith apples (approximately 400g), peeled, cored and diced
  • 1 tsp cinnamon
  • 2 tbsp water

Loaf

  • 2 cups wholemeal self-raising flour
  • ½ cup vanilla protein powder
  • 1½ tsp baking powder
  • 2½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Pinch of salt
  • 3 large eggs
  • ¾ cup Chobani Natural Greek Yoghurt
  • ⅓ cup unsweetened stewed apple (from above)
  • ¼ cup extra virgin olive oil or light olive oil
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract

For the apple swirl

  • Remaining stewed apple (approximately ¾ to 1 cup)
  • 1 tsp cinnamon

Utensils: small pot, large bowl, loaf tin

Method

  1. Preheat oven to 180°C fan-forced and line a loaf tin with baking paper.
  2. To make the stewed apple, add the diced apples, cinnamon and water to a saucepan. Cover and cook over medium-low heat for 10 to 15 minutes, stirring occasionally, until softened and slightly broken down. Allow to cool slightly.
  3. In a large bowl, combine the flour, protein powder, baking powder, cinnamon, nutmeg and salt.
  4. In a separate bowl, whisk together the eggs, Greek yoghurt, ⅓ cup stewed apple, olive oil, maple syrup and vanilla until smooth.
  5. Add the wet ingredients to the dry ingredients and gently fold until just combined.
  6. Pour half the batter into the prepared loaf tin. Spoon over half of the remaining stewed apple and swirl gently with a knife. Add the remaining batter, then top with the remaining apple.
  7. Bake for 45 to 55 minutes, or until golden and a skewer inserted into the centre comes out clean. Cool for 10 minutes before removing from the tin. Allow to cool completely before slicing.

Can I make this ahead for the week? Yes, and it's exactly what this loaf is built for. Once completely cool, store it in an airtight container in the fridge for up to five days. Slicing the whole loaf before you store it makes it easy to grab a piece on the way out the door.

Can I freeze it? Absolutely. Slice the cooled loaf, layer the slices with baking paper between them, and freeze for up to three months. Individual slices thaw at room temperature in about 30 minutes, or you can warm one straight from the freezer in the toaster or microwave.

What protein powder works best? A vanilla whey or whey blend gives the softest result. Plant-based protein powders absorb more liquid, so if you're using one, add an extra tablespoon or two of yoghurt to keep the batter moist.

Can I use a different apple? Granny Smiths are ideal because they hold their shape and their tartness balances the sweetness. Pink Lady or Fuji will work too, though they're sweeter, so you may want to reduce the maple syrup slightly.

Can I make it gluten free? Yes. Swap the wholemeal self-raising flour for a gluten-free self-raising blend. The texture will be a touch more delicate, so let the loaf cool completely before slicing.

Do I have to peel the apples? No. Leaving the skin on adds extra fibre and works fine in the stewed apple. The texture is slightly more rustic, which some people prefer.

Why did my loaf come out dry? Protein powder absorbs a lot of moisture, so overbaking is the usual culprit. Start checking at the 45 minute mark, and pull it out as soon as a skewer comes out clean with just a few moist crumbs.

Is this suitable for kids' lunchboxes? Yes. It's nut free as written, mildly spiced, and holds together well in a lunchbox. Check your protein powder label if your school has specific allergen requirements.
